Curds being cut.

The curds are cut, cooked and stirred to help separate out the whey. Curds are made up of the solid components of milk: protein, butterfat, lactose and minerals. A watery byproduct of the cheesemaking process called whey separates from the curds. Whey also contains trace elements of protein, butterfat, lactose and minerals and can be dried and used as an ingredient in many common foods found on your grocer's shelf.
