Blades (commonly called "dashers") in the ice cream freezer churn the mix, scraping the sides of the freezer as air is injected into it and the mixture is frozen. With the addition of air, one gallon of mix becomes two gallons of ice cream. If it weren't for the air the ice cream would turn into a solid brick that would bend a spoon.
