CheViking
It's not quite cheddar and it's not quite Viking; it's CheViking. CheViking was created by students in our Production department. We use the production method for our Viking cheese and the cultures from our cheddar. This results in a smooth flavor and creamy texture with high moisture content and slight bitter afternotes.
